Turkey dish is very popular in the United States during Thanks Giving and Christmas season. When I was running a little short on time last thanks giving, I did this quick dish. I just prepared the following ingredients:
• 1 pound boneless turkey breast, cut into ¼-inch diagonal slices
• Salt and freshly ground pepper
• ¼ cup all-purpose flour
• 1 large lemon
• 2 tablespoons olive oil
• ¼ cup dry white wine (optional)
• ½ cup low-fat, low-salt chicken stock
• 1 tablespoon drained capers
• 2 teaspoons unsalted butter
• 1 tablespoon chopped fresh parsley
Season the turkey slices on both sides with salt and pepper and dredge in flour, shaking off the excess. With a sharp paring knife, peel the lemon, removing all the white membrane. Cut segments from the peeled lemon, working over a bowl to catch any juice. Film a nonstick pan with the olive oil and cook the turkey slices 3 minutes on each side, until they are golden brown. Transfer the turkey to a plate to keep warm. Pour the wine, if desired, into the pan and reduce by half, stirring constantly. Add the chicken stock, lemon segments and juice, and capers, bring to a boil, and check for seasoning, and spoon the sauce over the turkey slices.
